Happy Thanksgiving
I’m a vegetarian so for art every day month I’d like to give you a really fun recipe. It’s not really a recipe but a method you can use in lots of different ways. It’s all about being creative, improvising, having a good time and using up all those left overs!
Veggie Savory Pie
This works really well if you have a cast iron skillet but you can use a casserole dish also.
Preheat the oven to 400
Then oil skillet or casserole, I use coconut oil.
I don't measure anything the amounts can vary. If you have half an onion a clove or two of garlic and some chopped up mushrooms saute them for a few minutes. Then comes the fun part, look at all those left over veggies and think about what would taste good together. Almost any veggie will do; cubed turnips, cauliflower, broccoli, spinach, corn, even left over green bean casserole. Remember this is all about improvising and using what you have. Cut the veggies in bite size pieces and add them to the skillet, mix and warm everything together. The skillet or casserole dish should be about 3/4 full. If it’s not, look in your pantry and see what you have. Do you have a can of stewed tomatoes? If you do add them to the mixture. How about a can of white beans or chick peas? Drain and add them. If the mixture looks a little dry (It should have the consistency of a stew) add a little veggie broth, coconut milk or white wine. Now you can add your favorite dried herbs or spices and salt and pepper to taste. Warm everything through. If using the casserole, transfer the mixture from the skillet to the casserole dish. Ok now get those left over mashed white potatoes or mashed sweet potatoes and spread them on top of the veggie mix. I like to sprinkle with a little paprika. (Creamy polenta or creamy corn meal also works well as a topping.) Place in the oven for about a half hour. Now all the left overs are gone and you have a great meal. And you spent time being really creative!
